Strawberry Cheesecake Cookies

Ingredients:

1 ¾ cups all-purpose flour

½ tsp baking powder

¼ tsp salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 tsp vanilla extract

¼ cup cream cheese, softened

½ cup chopped fresh strawberries (or freeze-dried for extra crunch)

Directions:

Preheat Oven: Set oven to 180°C (350°F) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large bowl, cream together butter, cream cheese, and sugar until smooth and fluffy. Add egg and vanilla; mix well.

Add Dry Ingredients: Stir in flour, baking powder, and salt until a soft dough forms.

Fold in Strawberries: Gently fold in chopped strawberries. Chill dough for 20 minutes to firm up.

Bake Cookies: Scoop dough onto the prepared sheet and bake for 12–14 minutes, until edges are lightly golden.

Cool & Serve: Let cookies cool completely — they’ll be soft, creamy, and slightly tangy, just like cheesecake!
