Easy Mediterranean Flatbread with Fresh Herbs & Hummus

Ingredients:

For the Flatbread:

2–3 pre-made flatbreads or pita breads

2 tbsp olive oil

1 tsp garlic powder

Salt & black pepper to taste

For the Topping:

½ cup hummus (store-bought or homemade)

1 cup cherry tomatoes, halved

½ cucumber, thinly sliced

¼ cup Kalamata olives, pitted and sliced

Fresh herbs (parsley, mint, or basil), chopped

Optional: drizzle of extra olive oil

Directions:

Prepare the Flatbread:
Preheat oven to 375°F (190°C). Brush flatbreads with olive oil and sprinkle with garlic powder, salt, and pepper. Warm in the oven for 5–7 minutes until lightly crisp.

Spread the Hummus:
Remove warm flatbreads from the oven and spread a generous layer of hummus on each.

Add Toppings:
Top with cherry tomatoes, cucumber, olives, and sprinkle fresh herbs over the top. Drizzle with extra olive oil if desired.

Serve:
Slice into pieces and serve as a light meal, snack, or appetizer.
