  • ¼ cup granulated sugar

  • 1 large egg, at room temperature

  • 3 tablespoons unsalted butter, melted and cooled

  • ½ teaspoon salt

  • 3 to 3½ cups all-purpose flour

  • For the Filling:

  • 8 ounces full-fat cream cheese, softened

  • ¼ cup powdered sugar

  • 1 teaspoon pure vanilla extract

  • ½ cup packed light brown sugar

  • 2 tablespoons ground cinnamon

  • For the Glaze (optional):

  • 1 cup powdered sugar

  • 2 to 3 tablespoons milk

  • ½ teaspoon vanilla extract

Directions

  • Activate the yeast: In a large mixing bowl or stand mixer fitted with a dough hook, combine warm milk, yeast, and granulated sugar. Let sit for 5–7 minutes until foamy.
  • Make the dough: Add the egg, melted butter, and salt to the yeast mixture. Mix on low speed, then gradually add 3 cups of flour, one cup at a time, until a soft dough forms. If the dough is too sticky, add up to ½ cup more flour, a tablespoon at a time, until it pulls away from the sides of the bowl but remains supple.
  • Knead and rise: Knead the dough (by hand or mixer) for 5–7 minutes until smooth and elastic. Place in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm spot for 1 to 1½ hours, or until doubled in size.
