4 medium sweet potatoes, peeled and cubed
2 tbsp olive oil
2 tbsp honey
½ tsp ground cinnamon (optional)
Salt & black pepper to taste
½ cup crumbled feta cheese
½ cup walnuts, toasted and roughly chopped
Fresh parsley for garnish
Directions:
Preheat Oven:
Preheat oven to 400°F (200°C).
Prepare Sweet Potatoes:
Toss sweet potato cubes with olive oil, honey, cinnamon, salt, and pepper until evenly coated.
Roast Sweet Potatoes:
Spread on a baking sheet in a single layer and roast for 25–30 minutes, turning halfway, until tender and caramelized.
Assemble the Dish:
Transfer roasted sweet potatoes to a serving dish. Sprinkle with crumbled feta and toasted walnuts.
Garnish & Serve:
Garnish with fresh parsley and drizzle a little extra honey if desired. Serve warm as a side dish or festive appetizer.
